BBQ

Originally, legend has it that offset BBQ was born in the oil fields of Texas and Oklahoma. Workers who had some time on their hands used sections of pipeline to make their smokehouse for themselves, their family and friends. But when the oil crisis of the 1980s occurred, some companies that worked in the oil fields began to market these BBQs. But their success did not come until 1987, when Joe Davidson exhibited a dozen of these BBQs at the Oklahoma State Fair in the hope of selling them. Not only did he manage to sell them, but he had over 100 on order. Joe marketed them under the name Oklahoma Joe.


The thing to know is that for Americans, the term BBQ does not have the same meaning as us! When we talk about BBQ in France, we often talk about the machine... A gas BBQ, a charcoal BBQ, a pellet BBQ, etc...And the term BBQ also means the act by which we cook our meats on this machine. “I had a BBQ this weekend.” For Americans, the term BBQ means something completely different. It means “to cook at low temperature and for long hours using wood to smoke meats”.

What we commonly call a BBQ, they call a grill!


So let's get back to our sheep or pigs...At the Shop, we use pellet BBQs...and yes it exists!

This allows us to better manage temperatures, change wood species, etc. They are also less heavy to move than Offset. But most often we come with our BBQ trailers

Certain preparations, such as Pulled Pork, are made before our services because it takes between 8 and 10 hours of cooking, depending on the quantities.
